Ingredients

250 g of cleaned carrots
150 g of ethritol or sweetener of your choice
3 eggs
300 g of wholemeal flour
50 g of potato starch
60 ml of sunflower seed oil
1 lemon, grated zest
1 sachet of baking powder

How to prepare carrot cake

Start by preparing the carrots then clean and grate them finely. In a bowl, beat the eggs with the ethritol until you obtain a frothy and homogeneous mixture. Add the grated carrots, grated lemon zest and sunflower oil to the egg mixture and mix well.
