When we want a light but nutritious side dish that is ready without stress, baked crusted asparagus comes to our rescue

Baked crusted asparagus can be served as an appetizer or as a side dish, ideal alongside a meat or fish dish. The only job we have to do is clean the asparagus, because then a quick seasoning and a passage in the oven and the dish is ready.

We find fresh asparagus in spring or early summer and wild ones are fine for this recipe. The rest of the year, however, we can use frozen ones, so we also bypass the whole cleaning phase.

Baked crusted asparagus, all the steps

If we want to give the dish a little more sprint we can flavor the breadcrumbs with sweet paprika or grated ginger.

Ingredients:
700 g of asparagus
80 g breadcrumbs
1 lemon
4 tablespoons of extra virgin olive oil
Salt to taste
pepper as needed

Let’s start with cleaning asparagus. Let’s run it under running water, then dry and clean it, cutting off the toughest parts with a small knife. To do this, just locate the point where theasparagus goes from soft to hard. Let’s bend it with two fingers without squeezing until it breaks.

We carry on like this with all the others asparagus until they are all clean. Then pour them into a bowl and season them with the‘extra virgin olive oila pinch of salt, a few grinds of pepper. Let’s turn them directly with our hands to let them flavor and they are ready for cooking.
We move glthe seasoned asparagus on a dripping pan already lined with parchment paper and before placing them in the oven, complete with the breadcrumbs, sprinkled on.

Let’s put them to cook in the preheated oven in static mode at 190° for about 25 minutes, turning them halfway through cooking.
While the baked crusted asparagus is cooking, squeeze the lemon well and filter the juice with a strainer. Then we take out the pan and complete the recipe with a sprinkling of juice. Dish ready and it took us a moment.
