I recently tried muffins without flour but with chocolate, and they are also good for those who have gluten intolerance problems or are simply celiac. These muffins are also easy to digest and will immediately disappear from the breakfast counter at breakfast.

Flourless muffins for breakfast

Very little is needed to make a light breakfast in the morning, as in the case of sugar-free muffins. You can prepare them even an hour before serving them, so as to eat them when they are still hot. The recipe is really very simple and you will only need the following ingredients:

2 eggs,

120 grams of sugar,

260 grams of rice flour,

100 grams of dark chocolate,

30 grams of chocolate,

1 teaspoon vanilla extract,

1 sachet of vanillin,

70 grams of sunflower oil,

150 ml of milk.

These muffins can also be made without chocolate, simply remove this ingredient from the recipe and proceed in the same way.

We prepare super light and flourless muffins, as you may have noticed from the recipe only a gluten-free variant which is also good for those who have food intolerance or allergy problems.

The procedure changes very little but while you prepare the dough I recommend you heat the oven to 180 degrees. In a bowl, whisk the eggs with the sugar and immediately add the vanillin together with the vanilla extract, the mixture should be frothy and light.

Then we add the seed oil and continue to whip everything together with the help of a whisk, after which we can continue by adding the already sifted rice flour with the cocoa and baking powder inside. Be careful with this operation, do everything little by little so as to avoid the formation of lumps.
