Bye bye Christmas, it sounds like a verse from a song, but it certainly isn’t. It’s a greeting to next year for the three days dedicated to Christmas, the 24th with the dinner, the 25th with lunch, the 26th with the recycling of lunch, or with the soup maritata. In short, after three days like this we can’t continue until January 1st otherwise our liver will go crazy.
And precisely to prevent this, today I propose a very good and at the same time very light recipe, perfect for purifying us a little, but at the same time filling us up. After eating all that goodness, it will be difficult to fill us up or satisfy our palate, but if you love yourself a little, cook lightly and to satisfy the taste, well, this recipe is very good.
Spinach poured soup
A velvety soup is what we need, prepared with spinach to help both our intestines and to purify our body a little.
Ingredients for 6 people
700 g potatoes
350 g skimmed milk (or rice milk)
300 g spinach (fresh preferably)
a few pieces of fennel sausage
spring onion
olive oil
salt
350ml water

We take a pan and put a couple of turns of oil in it, frying the chopped onion or spring onion (you see) and add the potatoes cut into slices, clearly removing the peel. The potatoes must be cut thinly. We add the water and milk and cook for about a quarter of an hour. At this point we will have to add the well-washed spinach and add salt and cook for another 6/7 minutes. With an immersion blender, blend everything and take the sausage, removing the casing and crumbling it.

How to prepare the spinach cream soup recipe
Cook it in a non-stick pan and add the sausage to the cream soup, serving everything hot. This velvety soup is very delicate and can also be enriched by the taste of dried fruit, for example by the addition of almonds, walnuts (I prefer these) and pine nuts which give that unique flavour, in my opinion, to winter recipes. We also sprinkle with black pepper if we like, preferably freshly ground.
