Ingredients for 4 people

  • 350 g of bucatini
  • a bunch of parsley
  • 1 clove of garlic
  • extra virgin olive oil to taste
  • salt up to taste
  • breadcrumbs to taste
  • black pepper to taste
  • grated pecorino romano to taste

Method

In order to prepare this first course, we begin to bring a pot with plenty of salted water to the boil. As soon as it boils, add salt and let the bucatini cook, which we’ll have to drain al dente, don’t throw away the pasta cooking water, it could come in handy.

In the meantime, put the extra virgin olive oil, the garlic clove in a pan and let it brown, add the chopped parsley (after washing it several times under running water, dab it with kitchen paper), salt, pepper and add the breadcrumbs. We mix everything.

Then add the bucatini, sauté in the pan and, if necessary, add a little cooking water from the pasta.
