Original lasagna, the real Bolognese recipe, impeccable to say the least and preparing self-respecting lasagna is not for everyone.

First the ragout. To prepare the ragù that is perfect, you don’t just need oil and tomato puree, but you need love and passion. The lasagna sauce, the original one, is Bolognese, with minced meat, or we can also prepare it as our grandmothers did in the carnival lasagna, they prepared and fried the wonderful meatballs. But let’s go back to our original recipe. We were saying… ragù, a wonderful thick sauce that boils in the pot, giving off that scent that stands out among a thousand scents.

The recipe that we offer you today is the true recipe of the Romagna lasagna and which therefore differs from the southern one which instead sees many more things put into the lasagna. Between hard-boiled eggs, as we said before, fried meatballs (but if you make them small, almost as if you don’t notice we’re eating them), lasagna changes its face, but the meat sauce remains the essential common denominator.

Ingredients

for the ragout:

  • 500 g mixed ground
  • 1 l tomato puree
  • 200ml water
  • mince (onion, carrot and celery)
  • nutmeg
  • laurel
  • chili
  • salt
  • extra virgin olive oil
  • 100ml red wine

for the lasagna

  • Fresh lasagna or knows how to cook directly in the oven
  • 200 g grated parmesan
  • 1 l béchamel

first prepare the Bolognese sauce by placing a little oil in a high-sided saucepan and frying the minced meat, when it starts to brown, add the minced meat and let it cook, adding the red wine to evaporate the alcohol. Add a sprinkling of nutmeg and bay leaf, salt and mix. Add the tomato puree and continue to mix, also adding the glass of water. Chili pepper (if we like) and cover with a lid.

How to make lasagna bolognese

Cook over low heat for about an hour, making the sauce thicken but not dry it. Once the ragù is ready, let’s prepare our lasagna alla bolognese. Take a baking tray and sprinkle the bottom with a little béchamel which we are going to prepare according to the recipe of Ricetta Sprint. We place a little ragù and then we arrange the lasagna sheets. another layer of béchamel, meat sauce and lasagna, sprinkling with Parmesan. We continue making as many layers as we want and then we conclude with the sauce and sprinkled parmesan. In the oven at 180° for 30 minutes and serve hot!
