  • 125 ml of light cooking cream
  • salt and freshly ground pepper to taste
  • a bunch of fresh asparagus of 125 g
  • Tropea onion to taste
  • 125 g of already cleaned smoked salmon fillet
  • 180 g of durum wheat semolina pasta

Salmon and asparagus pasta, procedure

Remove the hardest part of the asparagus and cook them for 5 minutes in a tall, narrow pot filled with lightly salted boiling water. Meanwhile, in a non-stick pan with a drizzle of oil, sauté the chopped onion. After the necessary time, add the well-drained and diced asparagus and continue cooking for 10 minutes.

Bring the asparagus cooking water back to the boil and boil the pasta for the cooking time indicated on the tin. After the necessary time, add a little of the pasta cooking water and then the cream to the sauce in the pan and proceed to cook for 2 minutes, stirring and adjusting the salt halfway through cooking and incorporating the chopped salmon. Once the pasta is cooked, drain it al dente and toss it in the pan with the sauce. Season with a pinch of pepper and serve hot.
