Since for many of us that time of year has begun when we go on a diet, I advise you to prepare a dish together that is good for the whole family, so that you too can delight yourself with something good.

Take two carrots and let’s make the perfect risotto recipe

Today it was my husband and I at lunch, I didn’t know how to accomplish something. but my only certainty was his request before going to work: pasta or rice didn’t matter, he wanted a first course. The recipe for two people that we must follow, therefore, is this:

2 large carrots (in case 4 very small ones are fine),

250 grams of rice,

a handful of almonds,

a spoonful of parmesan,

an onion,

a teaspoon of turmeric.

Let’s prepare risotto for lunch together

Immediately cook the rice following the cooking instructions, take a carrot, cut it into pieces and blend it in a blender adding oil and almonds. As in the case of pesto, then also add the parmesan because it will give consistency to your cream made with carrots.

Take the carrot you have left and cut it into really small pieces, or cut it into flakes, then put it in a pan, add both the oil and the onion into strips to brown everything together. Before the oil runs out, finish by also adding the turmeric which will make all the oil become a nice sauce. Now, also add the carrot that you blended previously and check that the rice is now halfway cooked.

All you have to do is complete by taking the rice and transferring it into the pan, pour two ladles of cooking water inside and complete the cooking… to make it more delicious, add some more cheese and leave to stir for about ten minutes and your dish is immediately ready to serve!
