Ingredients

200 g of smoked salmon
2 zucchini
A can of peas
100 g of pesto
A lettuce
A red onion
Salt and Pepper To Taste
Extra virgin olive oil to taste

Preparation of smoked salmon salad

To make this dish, start by cleaning and washing the lettuce: remove the non-intact leaves and let them drain completely. Meanwhile, drain the peas, pour a drizzle of extra virgin olive oil into a pan and sauté briefly with a pinch of salt. Once this is done, turn off and let it cool completely, meanwhile cut the onion into slices and set aside.

At this point, wash the courgettes, peel them and cut them into slices that are not too double. Brush them with extra virgin olive oil, heat a griddle and roast them on both sides, then again set aside. Take a large container and add the lettuce, peas, roasted courgettes, onion and smoked salmon that you have previously cut into small pieces.

Season with salt and pepper, a drizzle of extra virgin olive oil and mix well. Finally, add a little basil pesto to give an extra touch of flavor and the dish is served: here is your amazing salad with an inviting scent, ready to be eaten!
