500ml water

250 g sugar

Start by washing the oranges well and dry them carefully. Trim the ends of the oranges to create a flat, stable base. Cut the orange peel in a circular pattern, being careful not to cut the pulp and then make three or four more vertical cuts from the starting point of the first cut to the base of the orange. With the help of your fingers, delicately peel off the quarters of orange peel, leaving as little of the white part as possible. Place the peels in a pot and cover them with cold water. Bring to the boil and let boil for 5 minutes. Drain and repeat the operation two more times. This process will help remove the bitterness of the peel. In another pot, pour the water and sugar. Bring to the boil, stirring until the sugar has completely dissolved.

How to make glazed oranges

Add the orange peels to the pan with the sugar syrup and reduce the heat to low and leave to cook for approximately an hour and a half, or until the peels have become soft and translucent. Drain the orange peels from the syrup using a slotted spoon and leave to cool on a rack or on a sheet of baking paper. Once the orange peels are cool, place some granulated sugar on a plate or bowl. Pass the orange peels in the sugar to cover them completely. Let them dry in the open air for 24 hours by placing a sheet of baking paper on them. The sugar will harden and form a crunchy layer around the skins. You can store them in an airtight container, they will stay fresh for several days.
