And to think that they are the result of a recycled recipe that nobody ever thinks about. Exact! Made with just a few ingredients, and all present in every kitchen and at a low cost, this is one of the few preparations that allows you to shape sensational treats by recycling leftover egg whites.

Serve them as a dessert at the end of the meal together with a cup of custard, and it is immediately an unprecedented success. It is, in fact, an irresistible combination of flavors and moreover you will use the yolks to make the custard while the egg whites you will use to make the dough for the coconut sweets. The secret of their great success, however, is not only in knowing how to make the dough but in their cooking. In fact, you have to be very careful because if you overcook these biscuits in the oven, they will lose their softness. Also, be careful when once cooked you take them out of the oven and put them on a tray to cool because during this operation they amazing treats they are still soft so they could break and affect their intriguing appearance.

  • 210 g of egg whites
  • 600 g of coconut flour
  • grated organic orange zest
  • 400 g of whole cane sugar

Very soft coconut biscuits, procedure

In a bowl, whisk the egg whites. Proceed by incorporating the sugar into the foamy mixture without ever ceasing to whisk everything and then with a spatula, making movements from the bottom up, incorporate the coconut flour one at a time.

Flavor with the grated citrus zest and transfer the uniformly soft dough into a sac à poche with a star nozzle that you will use to shape the biscuits, at the right distance from each other, on a baking tray lined with parchment paper. Bake at 170° for 12-15 minutes and then take them out of the oven and let them cool before serving.
