Pasta alla Norma special: no ricotta needed!

Very few and very simple ingredients, which you will surely have at home, will serve you for this delicious pasta. We have chosen fusilli as the format, but you can also opt for gnocchetti or pennette, you choose the ones you prefer.

Ingredients for 4 people

  • 320 g of fusilli
  • 2 eggplants
  • 3 tablespoons of tomato pulp
  • 2 cloves of garlic
  • grated parmesan to taste
  • grated pecorino romano to taste
  • scamorza to taste
  • extra virgin olive oil to taste
  • peanut oil to taste
  • salt up to taste
  • fresh parsley to taste

Method

In order to serve this tasty, unusual first course that puts a good mood on the table, we begin by washing the aubergines under running water. With a knife we ​​remove the end, cut into slices of the same thickness and then put them in a large pan with peanut oil and fry.

As soon as they are ready, remove them and put them on a plate with kitchen paper to absorb the excess oil. In a pan, put the two cloves of garlic, the extra virgin olive oil, let them fry, then add the tomato pulp, add salt and let it cook for 10-15 minutes.

Then put plenty of water in a saucepan and bring to the boil, add salt and pour the fusilli and let the pasta cook for the time recommended on the package. Drain, put it in the pan with the sauce, mix gently.

Take a baking dish, put a little sauce, pour half the pasta, add the aubergines, parmesan and pecorino, cover with the remaining pasta, aubergines, scamorza and parsley. Bake in a hot oven at 180° for a few minutes, turn off and then serve.
