In view of lunchtime we serve a gourmet first course, using only two artichokes and a lemon… something so good that you only see in restaurants. I’ll reveal the recipe to you right away.

Since today is Saturday I thought I’d spoil my husband with a delicious dish, just like the ones they make at the restaurant. This is a recipe that I really prepare in just a few minutes, thanks to which I turn into a real chef.

Furthermore, it is a very light dish, easy to make, perfect even if you are following a diet and prefer to keep it light. I’ll tell you right away how to prepare our dish of the day

Recipe for the first course based on artichokes

The recipe I am about to suggest is really perfect to serve for lunch during a beautiful spring weekend, like the one we are experiencing before the Easter holidays. The recipe includes very few calories, with which you can also get the whole family to agree. The only ingredients we will need are the following:

300 g of spaghetti,

Two artichokes,

Half a lemon,

Salt,

Pepper,

Parsley.

This is how we prepare our spaghetti with artichokes

Let’s begin the preparation of our dish by cleaning the artichokes, removing the external leaves, and then leaving them to soak a little in water and lemon. Then we slice the artichokes into thin strips and put them back to soak for at least 10 minutes. Heat the oil in a pan and place the cut segments inside. When they are golden, remove them and then add the artichokes which should be boiled for about 7 minutes with the lid closed. After that, we add the pepper, a pinch of salt, parsley, let them cook for another 10 minutes with the juice of half a lemon.

In the meantime, Let’s cook the spaghetti following the instructions on the package and when they have reached the burning point, we transfer them to the pan with the artichokes, so that they brown together for a few minutes, adding a little cooking water… served on the table while they are still singing and for those who wish, also add a nice sprinkling of grated parmesan.
