Ingredients

600 g of potatoes
700 artichokes
200 g of mozzarella
200 g of sliced ​​cooked ham
100 g of grated pecorino romano
A clove of garlic
Butter to taste
Extra virgin olive oil to taste
Salt and Pepper To Taste

Preparation of the artichoke, potato, ham and mozzarella pie

To make this dish, start by washing the potatoes and blanching them in abundant salted water for about 10 minutes so that they are soft without falling apart. Once this is done, drain and let them cool, then peel them and cut them into slices that are not too thick. Set them aside and continue cleaning the artichokes: peel the stem, cut the ends and remove the tougher outer leaves.

Cut them into wedges and also remove the inner hair. Take a saucepan, pour a little extra virgin olive oil and a clove of garlic peeled and deprived of the central core. Let it fry and when it is golden brown add the artichokes and a small glass of water. Season with salt, cover and cook for about ten minutes so that the water is completely absorbed by the artichokes.

Turn off and compose the pie. Cut the mozzarella into slices, drain and set aside for a moment. Butter a baking dish well, spread a layer of potatoes, then the artichokes, the sliced ​​ham, the slices of mozzarella and continue until you finish with potatoes and mozzarella. Sprinkle the surface with grated pecorino and transfer to the oven: cook at 180 degrees for about 35/40 minutes. When a delicious golden crust has formed on the surface, switch off and remove the pie from the oven. Let it cool for a moment, then serve it and enjoy it!
