We are talking about a recipe of Portuguese origin which, however, we propose in a very Italianised variant using typical local ingredients with a simply unforgettable flavour.

Cooking: oven, 170° for about 35 minutes

  • a baking dish
  • a potato peeler
  • a non-stick pan
  • a spatula
  • Ingredients for 2 people
  • 2 small Tropea onions
  • 1 sprig of fresh parsley
  • a few giant basil leaves
  • a small red pepper (optional)
  • 300 g of already cleaned cod fillets defrosted
  • a drizzle of 100% Italian raw extra virgin olive oil
  • 400 g of yellow-fleshed potatoes

Cod with potatoes and onions, procedure

Dry the washed potatoes, peel them and cut them into slices that are not too thick and not too thin, which you will put in an oiled baking dish and cook at 170° for 20 minutes. Meanwhile, in a non-stick pan, sauté the peeled and chopped onions in a drizzle of oil with the chopped chilli pepper (optional) and flavor them with the parsley and chopped basil.

Pass the fish fillets under a jet of fresh running water, pat them dry with kitchen paper and, after the necessary time, arrange them on top of the potatoes. Decorate everything with the onion sauce and bake for another 15 minutes, always at the same temperature. Once cooked, add salt to taste. Serve the cod with potatoes and onions hot.
