Surely it is in the frying that to be good you will have to respect these two very simple precautions: first of all, once the small fish are floured you will have to shake them to prevent too much flour from sticking to them. Second, pay close attention to the temperature of the oil which must be the right one and must never exceed its smoke point.

  • coarse Cervia salt
  • 400 g of silversides
  • re-milled semolina flour to taste
  • evo oil for frying to taste

Fried fish here’s how they are made

Carefully pass the small fish under a jet of fresh running water and then let them drain in a colander. After the necessary time has elapsed, dry the small fish and coat them first in flour and fry them in a wok with oil at the right temperature, turning them from time to time to obtain a homogeneous browning.

Once cooked, transfer the fried fish to absorbent paper with a slotted spoon and let them rest for a few moments before seasoning with salt and serving while still hot.
