At Easter the tradition for those who are not vegan includes meat, meat and more meat. Especially the lamb, which can be prepared in different ways.

This one is special though, because the ribs are the most succulent part and cooking in the air fryer leaves them very light.

Lamb chops for Easter, there is only one trick for frying

The secret to these different-than-usual lamb chops for Easter lunch is not to overdo it. The breading must be crunchy but not too massive, otherwise the meat inside will not cook to perfection.

Ingredients:
12 lamb chops
2 large eggs
40 g grated pecorino
50 g breadcrumbs
2 sprigs of rosemary
fresh thyme leaves to taste
1 clove of garlic
salt to taste
black pepper to taste
extra virgin olive oil to taste

Preparation: step by step ribs

The first operation to do, if we haven’t already asked the butcher, is to obtain the ribs from rack of lambor, using a knife with a sharp blade. We try to work with precision so as not to ruin them, then we keep them in the fridge.
Let’s move on to the breading: beat the eggs in a large bowl using a hand whisk. Let’s season with one salt intake fine, a few grinds of pepper and then we also add the grated pecorino. Mix everything well to combine.
In another bowl we pour the bread crumbs and we flavor it with chopped rosemary and thyme plus a finely chopped clove of garlic. What we need for the breading is ready, now the fun begins.

We take the ribs out of the fridge and hold them by the bone. We dip them one at a time in the beaten egg and then in the breadcrumbs. Then again in the egg and again in the breadcrumbs because the double breading will hold up better this way.
We preheat the 200° air fryer, then we place the first four chops in the basket and brush them with extra virgin olive oil. We always cook them at the same temperature for about 10 minutes, turning them halfway through cooking. When they are ready we take them out and move on to the others, keeping them warm in the oven.
We serve the lamb chops fried in the air fryer while still hot and nice and crispy, accompanying them with a mixed salad or grilled vegetables.
