Ingredients for 4 people

  • 4 zucchini
  • 2 eggs
  • 2 slices of stale bread
  • milk to taste
  • a little fresh parsley
  • 30 g of grated Parmesan
  • 50 g of provolone del Monaco
  • salt up to taste
  • peanut oil to taste
  • breadcrumbs to taste

Method

In order to bring these meatballs to the table, we start by soaking the bread in a bowl with the milk, then we squeeze it and keep it aside. Then wash the courgettes, remove the ends, cut them into cubes or strips and put them in a pan with the peanut oil. As soon as they are cooked, remove them with a slotted spoon and place them on a plate with absorbent kitchen paper.

In a large bowl, put the bread, the eggs, the zucchini, the grated Parmesan, the provolone del Monaco, the parsley cut into very small pieces, the salt and mix well. We make the meatballs and pass them in the breadcrumbs, which must adhere well.

We put plenty of peanut oil in a non-stick pan and heat well and let the meatballs fry, remove them with a slotted spoon and then serve them immediately. We can serve the meatballs like this, or on a bed of cherry tomatoes and zucchini.

Just put the extra virgin olive oil, garlic and zucchini cut into thin strips, the cherry tomatoes, salt and let it cook over medium heat, the required time is about ten minutes. It’s not that hard, you can try if you want.
