Ingredients for 4 people

  • 1 roll of round puff pastry
  • 500 g of escarole
  • 200 g of speck
  • 20 black olives
  • a spoonful of capers
  • 50 g of grated Parmesan cheese
  • salt up to taste
  • extra virgin olive oil to taste
  • 1 clove of garlic

Method

In order to prepare this savory pie, we start by washing the endives after having cleaned them, then transfer them to a pot with water covering and blanch. Drain them as soon as they have softened.

Transfer them to a pan with extra virgin olive oil, garlic and add the pitted olives and capers. We cover with a lid and let it all infuse. We turn off after 8 minutes.

Cut the speck into small pieces, unroll the puff pastry, place it in a cake mould, leave the parchment paper. Prick the base with the prongs of a fork, transfer the escarole, remove the garlic, add the speck into small pieces, the Parmesan cheese. Put it in the oven immediately and let it cook at 180° for 25 minutes.

Remove from the oven when cooked and serve in slices.
