Ingredients for 4 people

  • 3 round aubergines
  • 200 g of provolone
  • peanut oil to taste
  • 150 g of cooked ham
  • 30 g of grated Parmesan cheese
  • salt up to taste

Method

To prepare this delicious, rich and tasty side dish, which you can serve at dinner as a complete dish, wash the aubergines and remove the ends.

Then we slice the aubergines, we have to obtain slices, not too thick, I recommend the same thickness, so the cooking will be homogeneous.

As soon as it’s finished, put the peanut oil in a pan, then heat and fry the aubergines, gradually remove them and then put them on a serving plate with absorbent kitchen paper. This way the paper will absorb the excess oil.

Take a pan, put a little oil and place a first layer of aubergines, then the provola, the cooked ham and cover with another layer of aubergines, cooked ham and finally the provola and grated Parmesan.

We cover with a lid and let it cook over medium heat, then after 10-12 minutes we turn it off and let it cool down and serve. This is the time required, the time required for the provola to melt, even in less time it could melt, depends on the power of the flame. We serve on plates and enjoy.
