There are diets sad, we do not doubt it. But also others that help us feel good without much effort and without making us miss anything of taste in the dish.

Just try them Dukan meatballs very light, based on meat, bran and zucchini to understand it. A second light, but of substance.

Very light Dukan meatballs, in the oven but not only

If we are on a diet, baking Dukan meatballs in the oven is the most suitable. If we are not, but we like this dough for meatballs anyway, we can cook them in a pan with a drizzle of oil, or directly in the tomato sauce.

Ingredients:
700 grams of minced veal
6 tablespoons of wheat or oat bran
1 medium courgette
1 egg + 1 egg white
1 clove of garlic
chives to taste
Salt to taste.

Preparation: meatballs

We take out the meat from the fridge at least 10 minutes before kneading the meatballs and then we prepare the other ingredients. Let’s take the zuchini, let’s sprout it and wash it. Then we simply cut it into julienne strips using the large holes of a grater.

We take the cut zucchini and squeeze it well so that it loses all its water because we need it dry. Then we pour it into a large bowl together with the minced meat and then we also add the bran by the spoonful, theegg whole plus the egg white (with the remaining yolk we can prepare a little mayonnaise. We complete with the finely minced (or crushed) garlic clove and a little chives to give flavour.

Season with a pinch or two of salt and then begin to knead directly with your hands. When everything is well blended, cover the bowl with plastic wrap and leave to rest in the refrigerator for 45 minutes.

An operation that is used for two reasons: the first is to let all the ingredients flavor well, but the second is even more important. So indeed the bran it will become softer and
it will assimilate that little vegetable water that was released by the zucchini julienne in the bowl. So let’s not neglect this stage.
After the rest time, we take everything back and form our Dukan meatballs of the size we want. Then preheat the convection oven to 190° and place the meatballs on a baking tray covered with parchment paper.
Insert the dripping pan, without the need to pass a drizzle of oil on the surface, in the middle part of the oven and cook for about 20 minutes or in any case until the meatballs are browned. When they are ready we take them out of the oven, wait 5 minutes for them to compact and serve them.
