Very soft lentil croquettes, zero grease, light and ready immediately. To be prepared immediately, so it will take little, little.

Lentil croquettes can be prepared with pre-cooked lentils in a jar or we can use dried ones, but even better if we use leftover lentils. For example, when you prepare lentils, in special containers, I freeze some of them in portions of about two. For this reason I will make the preparation of pasta and lentils much faster.

Pasta, but obviously also some other recipes, better to abound in ideas and I’m sure we’ll find lentils to match in the best possible way. Today I decided to take the leftover lentils in the pot so I don’t have to throw them away and tomorrow or the day after tomorrow they won’t be consumed. Let’s prepare these meatballs and see what comes out of them.

Very soft lentil croquettes

Fried or baked croquettes changes little, because they are tasty even if we decide to fry them, or if we cook them in the oven.

Ingredients

  • 500 g lentils
  • 1 potato
  • 1 egg
  • bread (two small slices)
  • grated cheese 30 g
  • grated pecorino 20 g
  • bread crumbs
  • pepper
  • parsley
  • salt

We also boil the potato in the microwave to shorten cooking times. Just use a microwave-safe container. Cut it and put it in a container with the lentils and start kneading. Let’s salt according to our needs and wishes, pepper and add the egg foreseen in the recipe. We soften the bread in water and when it is well softened then squeeze it well, we can also use only the crumb if we see that the rind will always be too hard, but I use all the bread. When we have mixed everything well and amalgamated everything compacting, then we will add the breadcrumbs, pecorino and grated cheese like parmesan, we knead again.

How to prepare lentil croquettes

Form the meatballs with your hands and place them on a baking tray covered with special paper. Let’s put it for about 20 minutes in the refrigerator while we preheat the oven. Let’s turn it on at 180° for 20 minutes. If we want to cook the lentil croquettes in a pan in defiance of the figure and the diet, then we will take a non-stick pan and pour in the seed oil good for frying and bring it to temperature (it will have to sizzle). Let’s drop the meatballs inside and cook them evenly on all sides. Place them on a plate with paper towels to remove excess oil, but this plate does not absorb much oil.
