Ingredients for 4 people

6 eggs
a bunch of chard
100 g of cow’s milk ricotta
50 g of grated Parmigiano Reggiano
salt to taste

To prepare this omelette, we recommend washing the beets after cleaning them, then boiling them in a pan with hot water and letting them soften a little.

Drain once cooked, then put the ricotta in a colander and let it drain a little, then beat the eggs in a bowl.

Add the grated Parmigiano Reggiano, salt and continue mixing. Take a baking dish and line it with baking paper. We pour the beets after having cut them a little into the eggs, we also add the ricotta.
