The vegetable stew is a special recipe, a little different, ideal if you don’t prefer meat. A good and healthy dish, here is the recipe!

The stew we usually prepare is meat, but today we decided to prepare a meatless version, today we offer you a different recipe. Instead of meat we prepare with Brussels sprouts, broccoli, carrots, potatoes, zucchini and peppers.

Everything must be cooked in a pot, only the sprouts and broccoli must be blanched first, only in this way will they be soft and well cooked. Accompany this stew with bread and if you prefer with cheese and dinner will be served. In the kitchen you need to vary, so you get bored.

Ingredients for 4 people

  • 200 g of Brussels sprouts
  • 2 potatoes
  • 2 carrots
  • 200 g of broccoli
  • 1 bell pepper
  • 1 courgette
  • extra virgin olive oil to taste
  • 1 onion
  • salt up to taste
  • chives to taste

Method

In order to prepare this dish, let’s start by washing the peeled potatoes, peeled carrots, broccoli, pepper, courgette and sprouts. Then we cut the potatoes, carrots, peppers (after removing seeds and filaments), courgette into cubes. Blanch the broccoli and sprouts in separate pots, add water and as soon as they are cooked, drain and set aside.

We transfer the vegetables to a large, non-stick pan, after having put the oil in the pan and the sliced ​​onion. Let the vegetables cook over medium heat until they have softened, then add the broccoli and Brussels sprouts and add the chopped chives.

We season with salt and turn from time to time. When cooked, turn off and serve. You could also prepare ahead of time and then reheat before enjoying.
