Ingredients

300 g. of 00 flour
150 g. of sugar
150 g. of butter
2 medium eggs
1 sachet of vanillin
3 gr. of salt
2 teaspoons lime zest
2 teaspoons of lime juice

For the lime ricotta cream

300 g. of ricotta
120 g. of sugar
2 teaspoons lime zest
1 tablespoon of lime juice

Preparation of lime and ricotta tart

Let’s start with the preparation of the tart. In the planetary mixer or in a bowl, mix the flour, sugar, butter, eggs, vanillin and salt, and work until a homogeneous mixture is obtained. If we used the planetary mixer, transfer it to a bowl, add the 2 teaspoons of zest and lime juice, knead a little more then wrap the dough in transparent film and let it rest in the fridge for at least half an hour.

While the dough is resting, we can prepare the lime ricotta cream: in a bowl, mix the ricotta with the sugar, until we obtain a creamy texture, then add the zest and lime juice.

We now preheat the oven to 180 degrees. Now roll out the dough between two sheets of baking paper, lightly flour the surface and prick with the prongs of a fork. Line a pan with the pastry and pour the lime ricotta cream inside, leveling it well. We put our tart in the oven and cook it for about 25-30 minutes, until it turns golden.
