Ingredients

200 g of flour
200 g of sugar
4 eggs
200 ml of fresh cream
100 g of butter
1 sachet of baking powder
1 tablespoon vanilla powder
A spoonful of bitter cocoa

Preparation of the cream and cocoa cloud cake

To make this fabulous cake, start by separating the yolks from the whites. In the bowl with the yolks, combine part of the sugar and whisk with a whisk until the latter are frothy and clear. Add the butter at room temperature and the sachet of baking powder. Separately, whip the egg whites until stiff and add them to the previous mixture of yolks. Add the sifted flour a little at a time, mix the ingredients until you get a homogeneous dough.

Pour the cream into a separate bowl and whisk it until stiff. Integrate it into the compound with circular movements from bottom to top. Finally divide the mixture into two parts and add a spoonful of vanilla powder to the first and a teaspoon of bitter cocoa to the other. Always mix with circular movements from bottom to top so as not to lose the volume obtained. Take a cake mold of the shape you prefer, even one for plumcakes is fine, butter it and line it with baking paper.

Alternate the two doughs or pour the vanilla one first and concentrate the cocoa one in the center, being careful not to let them merge. Put the cake in a preheated oven at 180 degrees for about 30 minutes, checking the cooking with a toothpick. Once the cake is cooked, take it out of the oven and let it cool down, transfer it to a serving plate and sprinkle it with icing sugar to serve, or with the addition of simply melted chocolate, icing or ganache.
