4 eggs
150 g of sugar
130 g of 00 flour
1 liter of milk
1 lemon
sprinkles to decorate

How to prepare the cream braid

Let’s start by preparing the custard: in a saucepan, heat the milk with the grated lemon zest until it comes close to boiling. In a bowl, beat the eggs with the sugar until the mixture is light and fluffy. Add the sifted flour to the egg and sugar mixture, mixing well to avoid the formation of lumps.

Pour the boiling milk slowly over the egg mixture, stirring constantly to prevent the eggs from curdling. Return the mixture to the saucepan and cook over low heat, stirring constantly until the cream has thickened. Let the cream cool, covering it with transparent film in contact to avoid the formation of a crust on the surface. Once the cream has cooled, roll out the puff pastry roll on a baking tray lined with baking paper.

Bake in a preheated oven at 180 degrees for about 25-30 minutes, or until the surface is golden and crispy. Once cooked, let the puff pastry with the cream cool before serving, cutting it into slices. Enjoy your meal!
