We are in spring and we are slowly starting to move towards cold dishes, there is nothing tastier. Today we suggest raw gnocchi, prepare an explosive mix with just a few fresh and tasty ingredients that will not disappoint you. Let’s see the sprint recipe together!
It is advisable to eat immediately and not to keep the gnocchi for more than a day. Always place in an airtight container or cover the dish with cling film.
Ingredients for 4 people
800 g of potato gnocchi
250 g of datterini tomatoes
120 g of Parmigiano Reggiano flakes
150 g of pitted green olives
a little basil
extra virgin olive oil to taste
salt to taste
black pepper to taste
Method of raw gnocchi
To prepare this first course, let’s start cooking the gnocchi. Bring plenty of salted water to the boil, pour in the gnocchi and add salt, drain when they float to the surface.
In the meantime, wash the tomatoes, dry them with kitchen paper, cut them into small pieces and set aside in a bowl, add the pitted olives, season with extra virgin olive oil, salt and pepper, mix gently.

Add the gnocchi and mix with a spoon and add the flakes of Parmigiano Reggiano, add the pepper and decorate with the basil leaves. We can put it in the fridge or enjoy it immediately!
