  • Ingredients for 4 people
  • salt
  • half a Tropea onion
  • 200 g of slightly spicy sausages
  • 250 g of steamed canned peas
  • half a glass of rosé wine
  • 350 g of tomato pulp
  • 320 g of durum wheat semolina pasta
  • a drizzle of 100% Italian raw extra virgin olive oil
  • grated Parmesan to complete qb (optional)
  • a sprig of fresh parsley

Pea and sausage pasta with tomato, procedure

Cook the pasta in a pot of lightly salted boiling water for the cooking time indicated on the package. In the meantime, sauté the peeled and chopped onion in a non-stick pan with a drizzle of oil and then brown the sausage cut into chunks. Deglaze with the wine and cook.

After the necessary time, add the well-drained peas and a ladle of the pasta cooking water. Proceed by cooking everything for 10 minutes, adding the tomato pulp already passed through the vegetable mill halfway through cooking and seasoning with salt. After the necessary time, drain the pasta al dente and mix it in the pan with the sauce. Sprinkle with grated cheese (optional) and then with chopped parsley and serve hot.
