This depends on the fact that even before its delicious flavour, this pasta conquers with its aroma intriguing and refreshing that everyone really likes: young and old. Succulent and tasty, it is excellent when eaten hot but it is even better savored fresh and this makes it the perfect dish to be eaten on the beach in the summer or during a trip out of town for a packed lunch as an alternative to the usual stuffed sandwich.

  • a wooden spoon
  • a small bowl
  • transparent film
  • Ingredients for 2 people
  • 160 g of trofie
  • 50 g of fresh giant parsley
  • 1 clove of small white garlic deprived of the core
  • 3 tablespoons of 100% Italian raw extra virgin olive oil
  • 30 g of shelled pine nuts
  • 3 tablespoons of grated cheese mix (pecorino, parmesan)
  • Salt to taste

Trofie pasta with parsley, procedure

Dry the well-washed parsley, remove the thicker stems and put it in a kitchen mixer. Add the garlic, the pine nuts, the mix of cheeses, the oil and blend everything several times until you have a homogeneous sauce which you can adjust with salt, if necessary.

Now transfer the prepared parsley pesto into a small bowl and let it rest for 10 minutes covered with transparent film. Boil the pasta in a pot of lightly salted boiling water for the cooking time indicated on the box. After the necessary time, drain it al dente and season it with the parsley pesto, adding a ladleful of the trofie cooking water if necessary. Serve.
