  • a saucepan
  • a slotted spoon
  • a pot
  • a colander
  • a wooden spoon
  • a cutting board
  • Ingredients for 2 people
  • 160 g of durum wheat semolina pasta
  • a drizzle of 100% Italian raw extra virgin olive oil
  • half a Tropea onion
  • 1 clove of black garlic
  • a handful of red cherry tomatoes
  • vegetable broth to taste
  • a red pepper
  • a few basil leaves

Spicy tomato paste, procedure

Score the well-washed cherry tomatoes with an x ​​on their surface and blanch them in a pot of boiling water for a few minutes. Once the necessary time has elapsed, drain and let them cool for a few moments before removing the peel and putting them in small pieces in a pan with a drizzle of oil, the minced garlic, the chopped onion and a pinch of chilli pepper. Proceed by cooking everything for a few minutes, adding boiling vegetable broth if necessary. Once the desired consistency of the sauce has been reached, turn off the flame, add salt to taste and perfume it with basil.

Boil the pasta in a pot of lightly salted boiling water for the cooking time indicated on the box. At the end of cooking, drain the pasta al dente and dress it with the sauce. Serve hot.
