  • a meat tenderizer
  • greaseproof paper
  • transparent film
  • a dripping pan
  • a baking dish
  • Ingredients for 2 people
  • a drizzle of semi-skimmed milk
  • chopped parsley and rosemary
  • Salt to taste
  • a drizzle of 100% Italian raw extra virgin olive oil
  • a few tablespoons of cornmeal
  • 250 g of chicken breast cut into slices

Wrap each slice of chicken in parchment paper and thin them with a meat mallet before washing them, drying them carefully and soaking them in milk in a bowl where you will let them rest for 1 hour covered with transparent film.

After the necessary time, drain the chicken slices, roll them in the cornmeal flavored with the chopped aromatic herbs and place them side by side in a dripping pan lined with oiled parchment paper, being careful not to overlap them. Drizzle with a drizzle of oil, cover everything with another sheet of parchment paper and bake at 180° for 25 minutes. Serve them hot.
