Obviously it requires little preparation time, if you use already cooked peas, green beans and so you will only have to dedicate yourself to cooking the hard-boiled eggs. A perfect dish for dinner, if you want you can accompany it with fresh bread, the slipper is allowed.

Ingredients for 4 people

  • 4 eggs
  • a can of peas
  • 150 g of whole slice cooked ham
  • cooked green beans to taste
  • 1 carrot
  • 1 onion
  • 180 g of sweet provolone
  • salt up to taste
  • fresh parsley to taste
  • extra virgin olive oil to taste

Method

In order to prepare this dish, let’s start cooking the eggs, put cold water in a pot that must cover the eggs, heat the water. As soon as it comes to a boil, continue cooking for another 8-9 minutes. Let’s remove them from the water and then shell them, but don’t cut them. Peel the eggs and keep them aside.

We wash the carrots, peel them, cut them into cubes, also cut the cooked ham and the green beans into small pieces, let the peas drain, gradually put them in a bowl. Then add the diced provolone cheese. Add the chopped onion, season with extra virgin olive oil, salt and chopped parsley (after washing and patting dry with kitchen paper).

Then add the hard-boiled eggs cut in half or wedges and serve. If we want we can cover the bowl with plastic wrap, put it in the fridge and let it cool, if we prefer it cold. If it were to advance we can keep the salad in an airtight container for a day.
