  • a sprig of fresh parsley
  • 3 level spoons of 100% Italian raw extra virgin olive oil
  • a few leaves of fresh basil
  • salt and freshly ground pepper
  • 500 g of cod fillets
  • the juice of 2 organic lemons and their finely grated zest
  • 80 g of breadcrumbs

Cod au gratin super light, procedure

Dry the well-washed fish fillets, use tweezers to finish depriving them of all the bones and place them in an oiled baking dish, taking care not to overlap them.

Sprinkle them with the breading made by mixing the breadcrumbs with the chopped parsley and basil, a pinch of salt and pepper. Carefully adhere the breading to the fish and bake at 200° for about 20 minutes. After the necessary time, take the cod au gratin out of the oven and serve it hot.
