500 g of new potatoes
120 g of grated Parmesan cheese
A clove of garlic
200 g of butter
Aromatic herbs to taste to taste
Salt and Pepper To Taste

Preparation of new potatoes with parmesan

To make this side dish, wash the potatoes very well in order to eliminate all the impurities: if necessary you can also use a clean sponge and then dry them with a clean cloth. Coarsely cut them into pieces and blanch them for 5/6 minutes in plenty of salted water, drain and set aside. In a saucepan, melt the butter, taking care not to burn it, then switch off and remove it from the heat: add the aromatic herbs, the grated Parmesan cheese and mix quickly.

Peel the garlic, remove the central core and chop it finely, proceed with the aromatic herbs as well, mincing them minutely. Add both to the butter and parmesan, a pinch of salt and pepper, mix again and pour the potatoes into this sauce, mixing them well so that they are completely covered.

Line a baking tray with parchment paper, turn the potatoes over, distributing them evenly and avoiding overlapping them, then preheat the oven to 200 degrees in ventilated mode. Once it reaches temperature, insert the dripping pan and cook for about 30 minutes, monitoring cooking to avoid burning. When they are golden brown and with a delicious crust, turn off the heat and serve them immediately or leave them to cool for a moment before serving them. I am a real pleasure!
