  • Ingredients
  • 150 g of bacon cut into a single slice
  • 400 ml of meat broth
  • 45 ml of extra virgin olive oil
  • sautéed carrots, onion and celery to taste
  • 15 g of cornstarch
  • a pinch of salt
  • a drizzle of dry white wine to taste
  • 350 g of minced Chianina beef

White ragù, procedure

In a saucepan, cook the sautéed vegetables in the oil for 1 minute. Incorporate the minced meat and the minced bacon, mix and incorporate the cornstarch. Proceed with cooking over high heat for a few minutes and deglaze with the wine. Let the alcohol evaporate and add 2-3 ladles of boiling broth to cover all the meat.
