  • 20 g of glucose
  • cold water to taste
  • 10 oranges
  • granulated sugar to taste
  • 200 g of extra dark dark chocolate

Candied oranges in chocolate, procedure

Carefully dry the washed oranges, remove the stalk and base and cut them into 4 mm thick slices which you will collect in a pan where you will cover them with cold water. Bring everything to a boil over a moderate flame and then drain the oranges and then immediately put them back in the pot, cover them with cold water, add the sugar and bring them back to the boil again before incorporating the glucose.

Carefully emulsify, skim if necessary and cook for 15 minutes before turning off the flame and letting it cool. Once the necessary time has elapsed, bring everything back to the boil and then cook for 3 minutes before turning off the flame and allowing the mixture to acclimate before covering it and letting it rest in the fridge for at least 8 hours. Alternatively, to speed up the drying times of the citrus slices, bake them at 110° for 1 hour. Once dry, dip each half of all the candied orange slices in the cooled melted chocolate and then let them rest for a few minutes on a baking tray lined with parchment paper. When the chocolate is solidified, serve them.
