An appetizer or main course that will win over all lovers of fish dishes and especially shellfish: orange-scented prawns au gratin. An excellent dish, ideal if we have people for lunch or dinner.

A light recipe but with an intense flavour.

Shrimps au gratin a light and super fast appetizer

Ingredients:
700 g prawns
1 orange
Lemon peel
breadcrumbs to taste
Salt to taste
white pepper to taste
1 bunch of parsley
50ml orange juice
50ml extra virgin olive oil
15ml lemon juice

Shrimp preparation

For the preparation of this flat the ideal is to choose large prawns that are better fresh, but we can also opt for frozen ones. The important thing is the size and above all that we have a lot pulp.
Let’s wash them and put them on a cutting board, after which let’s clean them carefully by removing the head, tail and superfluous parts. Once our prawns are clean we can transfer them to a bowl.
At this point we prepare the gravythe emulsion of our prawns, that is a fundamental part that gives the final flavor to our recipe.

Let’s take a glass and put all the liquid ingredients: the orange juice, two thirds of our lemon juice, the oil and a pinch of salt. We beat everything vigorously with a fork and in this way we will obtain a creamy sauce which we will pour into the bowl in which we had put the cleaned prawns. Mix everything and add a little parsley and pepper. Let it rest for 15 minutes. Then we take a scallop shell, place a slice of orange and pour over the prawns with their marinade, a little breadcrumbs and a drizzle of oil.
We put in the oven at 200 degrees for 10 minutes. We take it out and serve it hot: our Mediterranean dish is ready.
