  • salt and pepper
  • 1 fresh chilli
  • some desalted capers
  • 25 g of grated Parmesan
  • two and a half tablespoons of 100% Italian raw extra virgin olive oil
  • 225 gi chicory
  • 180 g of pasta

Clean the washed chicory, cut the leaves into julienne strips and the stems into small pieces and leave everything to rest in a bowl of cold water before draining and cooking them for a few minutes in a pot of lightly salted boiling water. After the necessary time, drain the chicory leaves and let them cool for a few minutes before blending them in a kitchen mixer with 50 ml of its cooking water. Season with the grated Parmesan and pepper and keep in a bowl.

In a non-stick frying pan, cook a spoonful of oil with the garlic, capers and chopped chilli pepper for a few seconds. In the meantime, drain the chicory stems and blanch them for 7 minutes in the pot where you cooked the chicory. Once it comes to the boil, add the pasta and cook it for the cooking time indicated on the box. After the necessary time, drain the pasta and flavor it in the pan with the sauce before dressing it with the chicory cream. Serve hot.
