I prepare it every time I have the opportunity, and in the past this dish has even allowed me to impress my mother-in-law who liked it very much. To prepare this recipe we will only need the ingredients that I will list below:

400 g of rice,

Two bottles of tomato puree,

Stretched curd cheese,

Parmesan,

50 g of butter,

An onion,

Two carrots,

Chopped cherry tomatoes,

Here’s how to prepare risotto

Let’s start preparing our dish with rice, let’s cook it following the instructions on the package but stop halfway through cooking. In the meantime, pour the tomato puree into a pan to cook it for the same time as the rice, adding salt, oil and pepper. Then, take a pan and fry the onion cut into pieces, adding the carrots cut into small pieces.

Now, mix together the carrot and onion ceiling with the sauce, also adding the rice, and then move on to the next step. Pour the mixture into a terracotta baking dish or baking dish that you can put in the oven, add the string cheese inside and at the top of the risotto also add the cherry tomatoes cut into pieces and a few basil leaves if you like.
